Puree of Celery Soup

4 Servings, 115 calories each

Ingredients:

1 Bunch of celery stocks,  washed, and chopped course

1 medium potato, chopped

1 medium onion, chopped

Celery, onion, and potato in blender

Celery, onion, and potato in blender.  Note unpeeled potato.

1 tablespoon Better-Than-Bouillon (vegetarian or chicken)

Add all ingredients to 8 cups boiling water.  Simmer until potatoes and celery are just cooked through.  Puree in blender.
