Squash, Roasted


2 Servings, 40 calories each per 100 grams (about 3/4 cup)

1 Butternut, acorn, or other hard squash, peeled, sliced or diced

Preheat oven at 450 degrees.  Place the vegetable in the Dutch oven or cooking pot (with cover) and add 3 to 4 spritzes of olive oil and sprinkle a pinch of sea salt.  Toss to cover all vegetable surfaces.  Cover and roast for 20 – 30 minutes.
