Puree of Leek Soup


2 Servings, 115 calories each


1 leek, quartered, washed, and chopped

1 medium potato, chopped

1 medium carrot, chopped

1 stalk of celery, chopped

2 teaspoons Better-Than-Bouillon (vegetarian, beef, or chicken)

Add all ingredients to 4 cups boiling water.  Simmer until potatoes and carrots are just cooked through.  Puree in blender.
