Leek and Potato Soup (clear broth)


2 Servings, 120 calories each


1 leek, quartered, washed, and sliced into 1/4 inch strips

1 medium potato, small diced

1 medium carrot, small diced

2 teaspoons Better-Than-Bouillon (vegetarian, beef, or chicken)

3-4 spritzes olive oil

Saute leeks in olive oil until transparent.  Add all ingredients to 4 cups boiling water.  Simmer until potatoes and carrots are just cooked through.
